The first thing to know is what you are planning on running in this time of need. The fewer the items or the smaller the amperage, the smaller and least costly inverter will be needed. I will be a simple formula that gives you an idea of the magnitude of the inverter you need.
If the device you plan on using is listed in watts, just go and use that number. If it is listed in amps, you just have this simple formula: volts (120) X amps use (listed on device) = watts. This will be the amount of watts the device will be used. So if you had 3 amp device, and you wanted to find the watts, the formula would be: 120 (volts) X 3 (amps) = 360 watts.
You would then total all the watt you will use and come with a number. Suppose your total watt consumption is 500 watts. If it would be a good idea to get a 750 watt inverter. Always a larger size than you think you need may be helpful.
Your next step will be to determine where your food will come. If the emergency is a very good chance that it will are from a battery connected to your vehicle, or you can a little better prepared and have a bank of batteries in a parallel way connected. Since most people read these are probably not familiar with making a battery bank I want only to perform the inverter from the vehicle. It is important to know which type of battery you will use. It is suggested you have a deep cycle battery or used for trolling motors or golf carts and that you so much amp hours as your budget allows. A few years back was I was able to 11 days using a 750W inverter, and one hours 120amp deep cycle battery attached to my car. I had the car running for 10 minutes every 2 hours for everything I had joined run and that was a laptop, 13 "color tv, direct tv receiver, modem for the laptop, 40W lamp, and a small box fan. That does not sound like much, but I thought I stay in the Ritz Carlton compared to most of my neighbors.
The last thing you need to know is how long will your power supply (battery) before the latter should be charged. First you know the wattage of all appliances. Let's say we have a total of 480 watts of power is used, we are running our inverter off a 12 volt car battery. Then we need this number, so that we know how many amps are used. We do this through the power (480) and divide by 12 (volts of the battery) and with 40 amps. The formula is: watts / volts = amps. If we are a 120 amp hour battery we would divide 120 (amp hours) by 40 (amps) and get 3 hours before the battery is dead. It is recommended not a battery with less than 50% of its capacity so you may want to drain the 3 hours to divide in half giving you 1 1 / 2 hours before starting the car to charge the battery.
